Sydney's First Ever Kombucha Bar Set to Open
Whether you believe the health benefits or not, kombucha has been a favoured brew in Russia, China, Korea and Japan for centuries.
Harnessing the power of Australia’s latest beverage craze, Leichhardt is about to become home to the country’s first ever kombucha bar. Already on tap at Ruby’s Diner in Waverly, Greenhouse Coffee in Darlinghurst and Orchard Street Elixir Bar in North Bondi, the makers of Wild Kombucha are just a week away from officially opening their very own watering hole — giving health nuts the opportunity to go directly to the source.
A sweetened, probiotic, mildly alcoholic (we're talking a tiny one percent) drink made from tea, cane sugar and a symbiotic culture of bacteria and yeast, kombucha has been a favoured brew in Russia, China, Korea and Japan for centuries, but only recently made the jump to the West. The drink’s supporters and producers rave about its alleged health benefits, although as this recent Washington Post article illuminates, the science on the beverage is still out.
Operating out of a converted warehouse on Parramatta Road (that also houses their production space), the Wild Kombucha Bar will be open Fridays and Saturdays between 10am and 5pm. Created by Ballsy Brewing, flavours on tap include finger lime and ginger, and stinging nettle and rosella. A reusable bottle costs $4 for 500mL and $5 for 750mL with refills at $8 and $12 respectively.
They’ll also be hosting a number of pop-up dining events, starting with a four-dish breakfast by Wild Thing Raw on Saturday, April 11. Future events will likely include vegan dinners and a chocolate and ice-cream dessert bar.
