Woollahra's Light Brigade Hotel Reopens After Huge Revamp

If you go down to The Light Brigade Hotel today, you’re in for a big surprise. Woollahra’s classic Art Deco watering hole is boasting new owners and quite the glam-up, reopening on Monday, November 16. And on level two, where the eatery used to be, you’ll now find a brand new restaurant, Brigade Dining. The revamp has kept the pub’s casual atmosphere, but given the food a serious fancying.

The crew behind the change is the Bayfield family, formally referred to as The Bayfield Group. They’ve been running hotels for four generations, but this is their first adventure in the eastern suburbs. Right now, they own the Dee Why Hotel and, over the years, they’ve taken care of The Caringbah, The Belrose, The Newport Mirage and, most famously, The Newport Arms (now owned by Justin Hemmes), where they ran the show for 24 years.

At the Brigade, chef Marco Adler (Fresh Catering) is in charge of the menu. He’s cooking up brave, bold, creative dishes featuring fresh, seasonal produce. Examples of his genius include maltagliati with king prawns; scallops, salmon belly, tartare, pea and watermelon; Pacific oysters with marinated roe; wagyu beef carpaccio; and raspberry and passionfruit crème with meringue drops pavlova.

“Our vision for the restaurant is to create a stand-out dining experience, whilst still keeping it closely connected to The Light Brigade Hotel," says Kaine Bayfield, Bayfield Hotels’ group general manager. “Teaming up with Marco Adler’s passion and expertise will definitely help us to achieve this.”

Brigade Dining is open for lunch and dinner from Monday to Saturday, as well as for Sunday brunch.
