Overview

Corner bakeries don't come much friendlier and straight-up bustling than Organic Republic. A teeny but mighty bakery sitting on Bondi's often bustling Glenayr Avenue, Organic Republic is a tried and true Bondi local go-to for freshly baked loaves, tasty baguette sandwiches and cinnamonny, insanely tasty, oh god doughnuts.

Organic Republic is indeed that: organic. Here's their philosophy on the ol' technicalities of the 'organic' label. "We undertake to be as Certified Organic as possible but must concomitantly balance our social and environmental duty to minimise food miles/CO2 e, respect the wisdom of  seasons, validate fair trade, reward ethical suppliers, slash packaging and purchase as locally as practicable."

After you've patted the slew of neighbourhood pups hanging about outside the bakery, squeeze inside. The staff are laidback, super friendly and know their stuff. Freshly baked, organic, artisanal loaves sit happily in the glass display cabinets (but not for long). These guys don't just settle for regular ol' recipes either, expect anything from quinoa and amaranth sourdough to one of Sydney's best gluten-free loaves.

You could spend everything on every last doughnut in the joint, but you'll have to get there early. Sit on a little street stool with an avo smash or take away pies, rolls, pizza slices, sandwiches and baguettes down a few blocks to the beach. Feeling something sweet? Pair the bakery's phenomenal coffee with spelt muffins, gingerbread cookies, chocolate cupcakes, almond croissants or fruit buns.
