Inspired by old-world Venetian cuisine and hospitality, restauranteur Chris Lucas is bringing a new iteration of Grill Americano to Sydney. Opened in Melbourne back in 2022, it hasn't taken long to transport the concept up the coast, with the historic Qantas House building – now called No. 1 Chifley Square – all set for a September launch. Fashioned alongside Chris' wife and design collaborator, Sarah Lucas, Grill Americano Sydney will showcase a deep appreciation for heritage restoration – just like previous Lucas Group ventures.
Slotting seamlessly into the heritage-protected Qantas House, this grand structure offers an enduring mid-century style that has earned countless fans since it was designed by architect Felix Tavener in the 1950s. Featuring a famed double-glazed glass curtain facade rising to an impressive 46 metres, this soaring building is widely considered an icon of post-war design in Sydney's CBD.
"I've always had a love for heritage buildings, and the opportunity to restore the iconic Qantas House is truly special. Like the Griffiths Teas Building, which we sensitively revitalised in 2017, this historic treasure offers the perfect home for Grill Americano Sydney. Its architectural beauty and timeless glass façade provide an elegant backdrop to bring the restaurant to life," says Chris Lucas.
With this architectural legacy in mind, Qantas House was undoubtedly the perfect fit for Grill Americano's nostalgic concept. Centred around a white-jacketed service rich in Italian-inspired elegance, this staple of bygone eras has quickly become synonymous with the Grill Americano experience. Likewise, the menu is bursting with cult-favourite dishes layered with flavour, sophistication and vintage charm.
As seen in the Melbourne restaurant, the heart of Grill Americano Sydney's kitchen will include a Josper grill, where a precise charcoal-fired heat ensures meat and seafood dishes are prepared to perfection with a subtle smoke. Taking things a step further, a bespoke handcrafted wood oven imported from Verona makes culinary creations resonate with even more authenticity. Plus, novel experiences like tiramisu served tableside elevate the guest experience through opulent theatre.
To help make Grill Americano Sydney an unforgettable experience, Chris Lucas has been hard at work recruiting a top-notch team to lead the restaurant. Already in place are restaurant manager Ruaridh Macdonald and general manager of culinary Damian Snell, who currently oversee the Lucas Group's nationwide offering. Meanwhile, Paolo Saccone (Mimi's) is directing a carefully considered wine program to enhance the experience.
